Key Responsibilities
• Prepare and produce a variety of artisanal breads, pastries, and baked goods to the highest standards of quality and consistency
• Execute all stages of baking including dough preparation, fermentation, shaping, baking, and finishing with precision and care
• Ensure a continuous supply of fresh baked products across all dining outlets, including breakfast, restaurants, lounge, room service, and special events
• Maintain exceptional standards of presentation, flavor, and texture, ensuring alignment with Aman’s culinary philosophy
• Monitor ingredient quality and freshness, supporting responsible sourcing and sustainability practices
• Manage inventory, minimize waste, and ensure efficient use of raw materials
• Maintain a clean, organized, and hygienic bakery environment in full compliance with USHPH / HACCP and food safety standards
• Collaborate closely with Pastry, Hot Kitchen, and Cold Kitchen teams to support menu development and operational needs
• Contribute to special events, tasting menus, and personalized guest experiences
• Support the training and development of junior team members, fostering a culture of excellence and teamwork
Experience
• Minimum of 5 years of experience as a Baker in ultra luxury cruise, luxury hotels, resorts or fine dining restaurants.
• Strong foundation in artisanal bread production, including sourdough, whole-grain, and specialty breads
• Experience with laminated doughs, viennoiserie, and high-quality pastry production
• Proficiency in traditional and contemporary baking techniques, including fermentation and natural leavening
• Experience working with professional bakery equipment and ovens
• Strong attention to detail with a commitment to consistency and quality
• Ability to work efficiently in a fast-paced, high-standard environment with early morning or variable shifts
• Collaborative team player with strong communication skills, ability to work in a multi-cultural environment.

Qualifications
• Professional culinary training with a focus on bakery or pastry preferred
• Prior shipboard experience strongly preferred, with an understanding of working in a maritime, multicultural environment
• Strong knowledge of United States Public Health Service (USPH) standards and HACCP principles, with the ability to consistently uphold sanitation, food safety, and inspection requirements within a cruise or hospitality environment
• Valid Standards of Training, Certification and Watchkeeping for Seafarers (STCW) Basic Safety Training required
• Ability to obtain and maintain all required seafarer medical certifications and documentation for international service
• Fluency in English required, with the ability to communicate effectively within an international team environment
